These cheeseburger hot dogs combine juicy beef burgers, melted cheese and sweet sticky onions, all served in soft hot dog buns with your favourite toppings.

Ingredients

For the beef hot dogs

500g beef mince
vegetable oil, for brushing
4 slices of your favourite cheese
4 hot dog buns
1 gherkin, sliced (optional)

For the sticky onions

2 tbsp sunflower oil
4 onions, finely sliced
1 tsp golden caster sugar
1 tbsp cider, malt, red or white vinegar

For the burger sauce (optional)

4 tbsp mayonnaise
2 tsp mustard (American or English, depending on preference)
1 tsp ketchup

Method

  1. If making the burger sauce, mix the mayonnaise, mustard and ketchup together in a small bowl. Cover and chill until needed. This can be made up to two days in advance.
  2. Put the beef mince into a bowl and season well with salt and pepper. Use your hands to mix everything together, then divide into four equal portions. Shape each portion into a sausage slightly longer than the hot dog buns. Roll gently on a tray to neaten, then cover and chill for at least 1 hour. They can be chilled for up to 24 hours.
  3. Light the barbecue and wait until the coals are ashen, or set a gas barbecue to high.
  4. For the onions, heat the sunflower oil in a cast iron pan on the barbecue (or use a frying pan on the hob). Add the onions with a generous pinch of salt and the sugar. Cook for 20–25 minutes, stirring occasionally, until golden and slightly caramelised. Add the vinegar and cook for a few more minutes until sticky and jammy. Remove from the heat.
  5. Brush a little oil over the beef hot dogs and barbecue for about 10 minutes until cooked through with char marks on all sides. Lay the cheese slices over the hot dogs and cook for a few more minutes until melted. If your barbecue has a lid, close it to help the cheese melt.
  6. Toast the cut sides of the buns if desired. Fill the buns with the cheesy beef hot dogs, then top with the sticky onions, sliced gherkins and burger sauce, or your favourite condiments.
