Creamy Buffalloumi & Tomato Curry

Preparation time: 5 minutes

Cooking time: 20 minutes

Serves: 2–3

Adapted from: BBC Good Food by Cassie Best

This rich and creamy tomato curry combines golden Buffalloumi with warming spices, fresh spinach and a silky tomato sauce for a quick and satisfying vegetarian meal.

Ingredients

For the curry

225g block Buffalloumi, cut into bite-sized cubes
2 tbsp flavourless oil (such as vegetable or sunflower oil)
1 large onion, chopped
2 garlic cloves, crushed
1 thumb-sized piece of fresh ginger, grated
2 tsp ground cumin
2 tsp ground coriander
1 tsp ground turmeric
400g tin chopped tomatoes
100ml double cream
80g fresh or frozen baby spinach
2 tsp sugar
1 tbsp garam masala
1 tsp nigella seeds

To serve

Cooked rice, grains or naan bread

Method

  1. Cut the Buffalloumi into bite-sized cubes and set aside. Heat 1 tablespoon of the oil in a large pan over a medium heat. Add the onion and cook for about 5 minutes until softened and translucent.
  2. Stir in the garlic and grated ginger and cook for a further 2 minutes until fragrant. Add the cumin, coriander and turmeric, stirring continuously for 2 minutes to toast the spices.
  3. Pour in the chopped tomatoes, stir well and simmer for 5–7 minutes until the sauce has thickened slightly.
  4. Reduce the heat and stir in the double cream. Simmer gently for 3–4 minutes until smooth and creamy.
  5. Meanwhile, heat the remaining tablespoon of oil in a separate frying pan over a medium-high heat. Fry the Buffalloumi for 3–4 minutes, turning regularly until golden brown on all sides.
  6. Add the golden Buffalloumi to the curry along with the spinach, sugar and garam masala. Stir gently and simmer for 5 minutes until the spinach has wilted and everything is heated through. If the sauce becomes too thick, add a splash of water or a little extra cream.
  7. Scatter over the nigella seeds and serve immediately with rice, grains or warm naan bread.
