Tender chicken pieces coated in a sticky honey, garlic and ginger glaze, perfect served with fluffy rice and steamed broccoli for a quick and delicious family meal.
Ingredients
For the honey chicken
4 chicken breasts (about 600g), trimmed and cut into 2–3cm cubes
2 tbsp plain flour
40g fresh ginger, peeled and finely grated
4 garlic cloves, finely chopped
6 tbsp soy sauce
5 tbsp honey
½–1 lemon, juiced
1 tbsp sunflower, vegetable, rice bran or rapeseed oil
To serve (optional)
Cooked rice
Steamed broccoli
Method
- Place the chicken into a large bowl. Sprinkle over the flour, season with salt and freshly ground black pepper, and toss until all of the chicken is evenly coated.
- In a separate bowl, mix together the grated ginger, chopped garlic, soy sauce, honey and half of the lemon juice.
- Heat the oil in a large frying pan or wok over a high heat. Add the chicken and fry for 3–4 minutes until lightly golden on all sides.
- Pour the honey sauce into the pan and stir well to coat the chicken. Continue cooking for around 10 minutes, stirring occasionally, until the chicken is cooked through and the sauce has reduced to a glossy coating.
- Taste the sauce and add the remaining lemon juice if needed for extra freshness.
- Serve immediately with fluffy rice and steamed broccoli, if desired.
