These sticky, sweet-and-spicy Buffalloumi skewers are brushed with a honey and chilli glaze and grilled until golden, perfect for barbecues or sharing platters.
Ingredients
For the Buffalloumi skewers
2 × 250g blocks Buffalloumi
1 tbsp neutral oil
For the honey glaze
1 tbsp sesame oil
1 tbsp neutral oil
2 tsp sesame seeds
2 tsp garlic granules
1 tbsp chilli flakes
100ml honey
1 tbsp apple cider vinegar
salt and freshly ground black pepper
Method
To make the honey glaze, mix all of the glaze ingredients together in a bowl and season with salt and pepper.
Cut each block of Buffalloumi into thirds, parallel with the fold, then break each piece in half at the fold to give 12 pieces in total. Carefully thread onto metal skewers.
Brush the barbecue bars with the neutral oil, then brush the Buffalloumi generously with the honey glaze.
Grill, turning carefully every 2–3 minutes and brushing with more glaze, until golden all over.
Alternatively, cook on the hob in a hot griddle pan.
Serve immediately with the remaining glaze on the side for dipping.
