Cooking Instructions – Perfect Roast Potatoes

  1. Parboil peeled and quartered potatoes (Maris Piper or King Edward are ideal) for 5–10 minutes.

  2. Drain well, then shake the pan to fluff up the edges.

  3. Heat the goose fat in the oven for around 10 minutes until smoking hot.

  4. Add the potatoes, basting them well in the hot fat.

  5. Roast for 50 minutes at 190°C / Fan 170°C / Gas 5, turning once, until golden brown and crispy.

Tip: Use 50g of goose fat for every 500g of parboiled potatoes.
