Specially selected native beef, sourced locally and matured on the bone for a minimum of 21 days using a traditional dry-ageing process for extra tenderness and flavour.

A fine cut of meat with a thin layer of fat over it to keep it moist during roasting. The joint is cut to your required weight, tied, and rolled, oven-ready. This boneless joint’s even shape makes cooking and carving a breeze.

Lean, tender, and packed with flavour, this sirloin joint is a classic choice for a truly memorable roast.

Cooking Instructions – Scotch Beef Sirloin Roast (1.5kg & 3kg)

  1. Preheat oven to 220°C (200°C fan) / Gas Mark 7.
  2. Season generously with salt, pepper, and optional herbs.
  3. Sear in a hot pan for 5 minutes, turning to brown all sides.
  4. Roast at 220°C for 20 minutes, then reduce to 180°C (160°C fan) / Gas Mark 4 and cook for:
    • 1.5kg: 15 minutes per 500g (approx. 45 minutes for medium-rare).
    • 3kg: 15 minutes per 500g (approx. 90 minutes for medium-rare).
  5. Rest for 20-30 minutes before carving to retain juices.

Adjust cooking time for preferred doneness. Use a meat thermometer (medium-rare: 55-57°C, medium: 60-65°C).

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
