Cut from the rib section of native-bred Scotch beef, this boneless joint is traditionally matured on the bone before being expertly trimmed and rolled by our butchers.

This boneless rib roast combines rich marbling and a natural fat cover, which bastes the joint as it cooks — producing a beautifully tender, juicy roast with outstanding beefy flavour.

Cooking Instructions – 2kg Scotch Beef Rib Roast

  1. Preheat oven to 220°C (200°C fan) / Gas Mark 7.
  2. Season generously with salt, pepper, and optional herbs.
  3. Sear in a hot pan for 5 minutes, turning to brown all sides.
  4. Roast in the oven at 220°C for 20 minutes, then reduce to 180°C (160°C fan) / Gas Mark 4 and cook for 15 minutes per 500g for medium-rare.
  5. Rest for 20-30 minutes before carving to retain juices.

Adjust cooking time for preferred doneness. Always check with a meat thermometer (medium-rare: 55-57°C, medium: 60-65°C).

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
