Season generously with salt, pepper, and optional herbs. Sear in a hot pan for 5 minutes, turning to brown all sides. Roast at 220°C for 20 minutes, then reduce to 180°C (160°C fan) / Gas Mark 4 and cook for: 1.5kg: 15 minutes per 500g (approx. 45 minutes for medium-rare). 3kg: 15 minutes per 500g (approx. 90 minutes for medium-rare). Rest for 20-30 minutes before carving to retain juices. Adjust cooking time for preferred doneness.
