A classic roasting joint, our Scotch Beef Topside is lean, tender, and full of rich, traditional flavour.

Cut from the hindquarter of locally sourced Scotch beef, this fine-grained joint is carefully trimmed and matured on the bone to enhance tenderness and taste. It’s a versatile cut that performs beautifully whether roasted to a perfect pink or slow cooked until meltingly tender.

The topside’s natural leanness and delicate texture make it a popular choice for those who enjoy a refined, flavourful roast that slices cleanly and carves with ease.

Cooking Instructions – Scotch Beef Topside (1kg, 2kg, 2.5kg & 3kg)

  1. Preheat oven to 220°C (200°C fan) / Gas Mark 7.
  2. Season generously with salt, pepper, and optional herbs.
  3. Sear in a hot pan for 5 minutes, turning to brown all sides.
  4. Roast at 220°C for 20 minutes, then reduce to 180°C (160°C fan) / Gas Mark 4 and cook for:
    • 1kg: 15 minutes per 500g (approx. 30 minutes for medium-rare).
    • 2kg: 15 minutes per 500g (approx. 60 minutes for medium-rare).
    • 2.5kg: 15 minutes per 500g (approx. 75 minutes for medium-rare).
    • 3kg: 15 minutes per 500g (approx. 90 minutes for medium-rare).
  5. Rest for 20-30 minutes before carving to retain juices.

Adjust cooking time for preferred doneness. Use a meat thermometer (medium-rare: 55-57°C, medium: 60-65°C).

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
