We are thrilled to have become Scotland's first and only producer of Buffalo Mozzarella, lovingly made with milk from our own herd of Water Buffalo on our farm here in the Kingdom of Fife.
Steve Mitchell is so proud of the quality of Buffalo Mozzarella we have achieved. He has visited many of the top mozzarella farm in Italy and Ireland. He recognised how high the bar was set and was determined to create a product that could challenge the very best!
And we think we have achieved just that.
We now have a Buffalo Mozzarella which is sumptuously creamy, full of flavour with a wonderfully soft texture - just the way it should be.
We think it is very special and were thrilled to be awarded Silver at the World Cheese Awards in 2022!

Our Head Cheesemaker - Tommaso Carbone
Tommaso was born and raised in Battipaglia, Italy—famous for its production of buffalo mozzarella. At just 11 years old, he began working in his family’s business, learning the art of cheesemaking alongside his grandfather. This craft has been passed down through generations since the business was founded in 1925—now celebrating 100 years!
After earning a degree in surveying, Tommaso dedicated himself full-time to the family business, mastering the production of buffalo mozzarella and ricotta. In 2017, he moved to California to help bring a Mediterranean buffalo farm’s dream to life—producing authentic buffalo mozzarella in the U.S.
With over 20 years of experience in Italy and five years in the U.S., Tommaso has now joined The Buffalo Farm team, bringing his expertise to Scotland.

The Journey of Scottish Buffalo Mozzarella
It’s fair to say that when Steve first ventured into buffalo farming, he knew very little about dairy farming—let alone mozzarella. However, customer demand quickly sparked his curiosity.
A visit from Gordon Ramsay while filming The F Word (insert link) proved to be a game-changer. Gordons genuine enthusiasm for the rich flavour of our grass-fed buffalo, combined with the ethical and welfare advantages of producing a Scottish alternative to imported Italian mozzarella, cemented the idea.
It felt like a once-in-a-lifetime opportunity—one that Steve simply couldn’t ignore. He saw the potential to scale production and realised this could be the key to fulfilling his dream: owning a farm and creating a wonderful environment to raise a family.
But turning that dream into reality wasn’t easy. The journey was filled with highs and lows—promising investors came and went, new buffalo were acquired, and then, just as momentum built, plans unravelled. The entire experience was captured in This Farming Life on BBC Two, showing the emotional rollercoaster behind the scenes.
Thankfully, it wasn’t the end of the road. Thanks to incredible support from customers and fans of This Farming Life, we launched a Founders Club campaign. The response was overwhelming—our supporters helped raise crucial funds which, alongside grant funding and additional investment, allowed us to make the dream a reality.
However, challenges persisted, and in March 2024, the company was forced into administration after overextending itself financially. With no external buyers coming forward, it seemed like the end. But Steve secured a loan that provided a lifeline—saving the herd and preserving many jobs. By purchasing the unsecured assets from the administrators and negotiating terms on the secured assets with willing creditors, we were able to continue trading.
While it was devastating for our Founders Club supporters who lost out, we remain committed to honouring their faith in us. For now, our focus is on firmly establishing our mozzarella in the market and growing sales to a sustainable level.
Our factory has the capacity to produce between 5 and 10 tonnes of mozzarella per week, yet we are currently producing less than 1 tonne. The road ahead is challenging, but with a dedicated team and a positive mindset, we believe anything is possible.

Looking ahead, we are excited to launch Greek-style Buffalumi in 2025. Inspired by traditional Greek halloumi, it will be made using a blend of local cow’s milk and our buffalo milk—just as Greek halloumi combines sheep and cow’s milk.
Additionally, we proudly produce a range of delicious Buffalo Gelato for our local customers, showcasing the exceptional quality of our milk in a whole new way.

The Buffalo Farm Dairy
We are incredibly proud of our state-of-the-art dairy facility at The Buffalo Farm, and we have some exciting plans for our Buffalo Milk!
Our primary focus is, of course, our Buffalo Mozzarella—but that’s not all. We also produce a delicious range of buffalo milk gelato, and let me tell you, it’s unbelievably good (even if I do say so myself!). Incredibly creamy, wonderfully rich, and bursting with flavour.
